For the frosting you will need salted butter, vanilla, pink Himalayan salt, strawberry extract, powdered sugar, milk, pink food coloring, and flamingo royal icing decorations.

You will also need a piping bag and frosting tip along with pink sanding sugar! I’m linking those items so you can buy them online if you can’t locate them in stores like Walmart, Michael’s, Party City, or Joann Fabrics!

The whole process for making these strawberry milk cupcakes is fun and easy. You’ll see that they’re pretty simple and straightforward, even with a homemade frosting for the top!

Preheat the oven to 350 degrees. Spray or line a standard muffin tin.

Steps 1-2: Add cake mix to a large mixing bowl. Using a hand or stand mixer, add in your oil, egg whites, yogurt and Nestle Nesquik Strawberry Flavored Powder and mix on medium until well incorporated. Add in your water.

Step 3: Add batter into the muffin tin until each is about 2/3 full. Bake for 16-20 minutes, or until a toothpick comes out clean. Allow to cool completely before frosting.

Steps 4-5:  In a large mixing bowl or stand mixer, cream the butter, and beat until light and fluffy. Mix in the vanilla and strawberry extracts and salt.

Steps 6-7: Slowly mix in the powdered sugar, 1 cup at a time, while adding a bit of the half and half or milk in between each cup.  Continue to mix for 1 minute or until creamy. Add in your pink food coloring.

Step 8: Prepare a piping bag and fill the bag with frosting.

Step 9: Frost your cupcakes, sprinkle with your pink sanding sugar, and top each cupcake with a Royal Icing Flamingo Decoration. Enjoy!

Ingredients

  • Cupcake Ingredients:

So crazy cute! I like that there is no extra food coloring needed for the cupcakes with the color from the strawberry milk and extract. So delicious!
