Using a boxed cake mix to make anything is just a shortcut. All of the major ingredients are included in the mix so you don’t have to go out of your way to drag out all the baking supplies.

Another reason I like to make cake mix recipes is just for the fact that I can whip them up at a moments notice. When we end up having company, when someone needs a sharable treat for a school event, or just to drop off a sweet treat with a friend.

The possibilities are endless and the cake mix eliminates a lot of the messy work of baking.

Add to your shopping list for this week some eggs, a yellow cake mix, some heavy cream, rainbow sprinkles, and some white chocolate chips! Most of these ingredients can be kept on hand in the pantry or the refrigerator. They all have a pretty long shelf life so you don’t have to stress about using them up right away!

I like half sheet baking pans that are quality (hello no noisy pops or sloshed cookie dough from twisting), I line my cookie sheets with silicone baking mats. These are a must when doing cake mix recipes which can settle and become thin at lot easier than traditional cookie dough.

Of course mixing bowls, a mixer, spatula, and some whisks should be on your list if you don’t have ones that you love. I also like to have a set of cooling racks so that my recipes can properly cool before they’re scarfed down by my family!

How to make the easiest blondies:

With so few ingredients you might already be expecting to hear this…but the process for making these blondies is really easy! Everything gets mixed up and then spread into a pan before baking. Before you know it you’ll have a delicious treat to share…or keep all to yourself, who could blame you?! They’re so tasty!

Preheat oven to 350 degrees. 

Mix cake mix and ½ cup of sprinkles in a bowl.

Add in egg, oil and heavy cream until combined. 

Mix in white chocolate chips. 

In a greased 8X12 or 9X9 pan, place batter inside and flatten. It will be thick – this is how it is supposed to be.

Sprinkle top with remaining sprinkles. 

Bake for 20-30 minutes depending on oven. You will want to make sure the edges are brown and a toothpick comes out clean when inserted into the center.

You will want the bars to cool completely before cutting them. About 45-60 minutes.

  • 1 Box of Betty Crocker Yellow Cake Mix
  • 1 egg
  • ½ cup heavy cream
  • ¼ cup vegetable or canola oil
  • ½ cup + 1 tablespoon of rainbow sprinkles
  • 6 ounces white chocolate chips

Instructions

  • Preheat oven to 350 degrees.
  • Mix cake mix and ½ cup of sprinkles in a bowl.
  • Add in egg, oil and heavy cream until combined.
