What do I need to make cream soda cake mix cupcakes?

This recipe has two different sections of ingredients. We have two ingredients for the cupcakes themselves and then three ingredients for the icing…but since one of the ingredients is technically the same this recipe only uses four ingredients!

For the cupcakes we need a boxed cake mix and some cream soda. You can use whatever kind you like. We used a red variety so it will tint the cupcakes a bit pink, that’s not going to make a big difference in flavor though so you can use what you have!

For the icing recipe you’ll need more cream soda, icing sugar (powdered sugar), and butter! I would venture a guess that at least a few of those items are already in your pantry or refrigerator so you are already well on your way to making these delicious cream soda cake mix cupcakes.

I like half sheet baking pans that are quality (hello no noisy pops or sloshed cookie dough from twisting), I line my cookie sheets with silicone baking mats. These are a must when doing cake mix recipes which can settle and become thin at lot easier than traditional cookie dough.

Of course mixing bowls, a mixer, spatula, and some whisks should be on your list if you don’t have ones that you love. I also like to have a set of cooling racks so that my recipes can properly cool before they’re scarfed down by my family!

For this particular recipe you will also need a cupcake pan, cupcake liners, and if you want to be extra fancy, some piping bags!

You can use those tools to make these delicious snickerdoodle cupcakes as well!

How to make cream soda cupcakes:

Preheat the oven to 375F.

Line two muffin pans with cupcake liners.

Place the 2 cups of cream soda for the buttercream in a saucepan and set over high heat. Bring to a boil and then reduce heat to medium to simmer until the cream soda is reduced to approximately 1/2 cup. Pour into a mason jar and place in the fridge to cool.

In a large mixing bowl, beat together the cream soda and white cake mix for 2 minutes, until light and completely combined.

Use a cookie scoop to portion out the cupcake batter into the prepared liners.

Bake the cupcakes for 18-22 minutes, until an inserted toothpick comes out clean.

Cool the cupcakes completely as you prepare the buttercream.

How to prepare the cream soda icing:

Here we see the frosting ingredients mixed together.

Place the butter and icing sugar in a large mixing bowl and beat together for 2 minutes until completely combined.

Add 2 Tablespoons of the reduced cream soda syrup, then taste and adjust with more cream soda syrup. This will make the frosting softer and more flavourful.

Scoop the frosting into a piping bag and twist the end to secure.

Snip 1″ off the bottom of the piping bag and then swirl the buttercream onto each cupcake.

Use an offset spatula to smooth down the frosting.

Place the sprinkles in a shallow bowl and then dip each cupcake, frosting-side down into the bowl to decorate.
