How to Make Lemon Blueberry Cookies

STEP 1: Mix

Use a mixer and cream together the butter and cream cheese. Then, add the lemon extract and lemon zest and mix. Next, add in the egg and cake mix, make sure they’re completely mixed in. Carefully fold in the blueberries so they don’t get crushed.

STEP 2: Chill

Cover the mixture with plastic wrap and stick it in the fridge for a few hours, this will allow the dough to firm up.

STEP 3: Make Icing

While you’re waiting, make the icing! Whisk together powdered sugar, lemon zest and lemon juice. Line your baking sheets with parchment paper as well.

STEP 4: Bake

Preheat your oven to 375 degrees, then drop the dough balls onto the baking sheet leaving about 3 inches of space between them. Throw them on the middle rack in the oven and bake for 20 minutes or until golden brown. When they’re done, let them cool on the pan for 10 minutes then move to a cooling rack.

STEP 5: Drizzle

Drizzle the icing you made all over the cookies when they have completely cooled. Feel free to drizzle as much or as little as you’d like! Let the icing to set before packaging them up.

Ingredients

  • 8 ounces cream cheese, softened
  • ½ cup butter, softened
  • 1 teaspoon lemon extract
  • 3 tablespoons lemon zest, reserve 1 tablespoon for icing
  • 1 large egg
  • 1 box yellow cake mix, can use lemon if desired
  • cups fresh blueberries
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Instructions

  • Use a mixer and cream together the butter and cream cheese.
  • Put in the lemon extract and 2 tablespoons lemon zest. Mix.
  • Add in the egg and mix.
  • Mix in the cake mix.
  • Carefully fold in the blueberries so that you don’t crush them.
  • Place plastic wrap on the bowl and put it in the fridge to chill for several hours. The dough should firm up.
