Why this Cinnamon Biscuit Recipe Works

These cinnamon bites from biscuits are quick, warm and delicious. They are perfect when you want a warm treat. They take about 5 minutes to make. No need to roll the dough. Just a soft and fluffy cinnamon flavored biscuit.

  • Speed and Ease: It uses refrigerated biscuit dough, bypassing the lengthy process of mixing, kneading, and proofing yeast dough. It is often ready from prep to plate in under 30 minutes.
  • Crowd-Pleaser: The combination of warm cinnamon-sugar coating, fluffy biscuit, and a core of melted sweet cream cheese is irresistible for breakfast, brunch, or dessert.
  • Minimal Ingredients: It requires only a few pantry staples: canned biscuits, cream cheese, sugar, cinnamon, and butter.

How Do I Stop the Filling from Leaking Out?

A close up on the treat.

Don’t overfill. Use 1/2 to 1 teaspoon of filling maximum per bite. More importantly, make sure your cream cheese is stiff/chilled when stuffing. Finally, pinch the seams completely shut and place the bites seam-side down on the baking sheet.

Pro Tip for Stuffed Biscuits Recipe

Chill your cream cheese slightly before stuffing—it’s easier to handle and won’t melt too quickly during baking the hot biscuits, giving you a gooey center without leaking.

Dough, cinnamon and sugar.
  • Refrigerator Biscuit Dough: This shortcut dough is the foundation of the recipe. It saves time while still delivering that classic biscuit texture. Its mild flavor lets the filling shine, and its structure holds the stuffing beautifully during baking. It has all the ingredients flour, baking powder etc.
  • Brown Sugar: Adds deep, caramel-like sweetness that pairs perfectly with cinnamon. It melts into the filling, creating a gooey center and helping the biscuits brown beautifully on top.
  • Cream Cheese: Brings rich, tangy contrast to the sweetness. It softens as it bakes, creating a luscious, creamy pocket inside each biscuit. Bonus: it helps balance the sugar so the filling isn’t overly sweet.
  • Cinnamon: The star spice. It is warm, aromatic, and nostalgic. It gives the biscuits their signature flavor and cozy scent, turning a simple treat into something special

Variations and Substitutions to Make Cinnamon Sugar Bites

Because this crispy cinnamon bite recipe uses simple, flexible ingredients, it’s easy to swap in what you have on hand. Making it perfect for busy days, picky eaters, or pantry cleanouts.

  • Cream Cheese Filling: Mix in lemon zest, orange zest, a dash of pumpkin pie spice, or even a couple of mini chocolate chips or chopped pecans with the cream cheese.
  • Dough: Use refrigerated crescent roll dough instead of biscuits for a flakier, puff pastry-like texture. Cut the crescent triangles into squares before stuffing.
  • Sugar Mixture: Instead of cinnamon-sugar, roll the bites in a mixture of brown sugar, pecans, and melted butter for a rich, caramel-like finish (like a mini monkey bread). You can also brush with melted unsalted butter.
  • Simple Glaze: Use a maple glaze (powdered sugar, maple syrup, milk) or a thin orange juice glaze (powdered sugar and orange juice) for brightness. You can also skip the glaze entirely and just serve them with the baked cinnamon-sugar coating or spread the icing over the biscuit.

How to Make Cinnamon Biscuits with Icing

They combines the three most irresistible elements of a sweet breakfast treat: the fluffy, warm bread of a biscuit, the gooey, sweet crunch of a cinnamon-sugar coating, and the rich, tangy burst of a molten cream cheese center.

Prep Ahead Suggestions for the Cinnamon Roll Bites

These biscuits are easy to assemble and bake but there are several things you can do ahead of time.

  • Prep the Filling (Up to 3 Days Ahead): Mix the cream cheese filling and store it in an airtight container in the fridge. When ready to use, cut it into cubes or scoop portions out.
  • Assemble and Refrigerate (Overnight):
    • Stuff and seal the dough balls (without dipping them in butter/cinnamon-sugar).
    • Place them on a parchment-lined plate or baking sheet, then cover tightly with plastic wrap to prevent the dough from drying out.
    • In the morning, proceed with dipping in melted butter and brown sugar and cinnamon, then bake as directed (you may need to add 2-3 minutes to the bake time since they are chilled).

Alternate Cooking Methods for Cinnamon Drop Biscuits

These treats are perfect for a weekend morning. You can make a batch in a pie dish or a casserole dish.

  • Air Fryer: Place the sealed, coated bites in the air fryer basket in a single layer (work in batches). Air fry at 350 for about 6-8 minutes, or until golden brown. Check halfway through.
  • Deep Fried (Cinnamon Pockets): Stuff and seal the dough, then fry in 375 oil for 2-3 minutes per side until golden. Roll immediately in cinnamon-sugar after removing them from the oil.

How to Store, Reheat and Use Leftover Best Cinnamon Biscuits

To keep them fresh, here are some tips to store, reheat and use your sugar and cinnamon biscuits.

  • Storage (Baked): Store leftovers in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 4 days.
  • Reheating (Quick Method): The microwave will work for 10-15 seconds, but it may make the biscuit slightly chewier.
  • Use Leftovers: Leftovers can be chopped up and mixed into plain pancake or waffle batter for a cinnamon-roll twist on breakfast.

Common Questions About This Flaky Biscuits Recipe

What Kind of Canned Biscuits Should I Use for the Cinnamon Bites From Biscuits?

Grands Flaky Layer biscuits are often recommended as they are large and easy to separate/flatten. Avoid the “southern style” or “buttermilk” biscuits if they are dense and don’t flatten easily; flaky layers are better for stuffing.

Do I Need to add Butter before the Cinnamon-Sugar?

Yes. Dip the sealed dough balls in melted butter first. The melted butter acts as a glue, ensuring the cinnamon-sugar coating adheres thickly and bakes into a beautiful, crisp shell.

Why is My Cream Cheese Filling Runny?

The cream cheese was likely too warm or you added too much milk/liquid (if any) to the filling mix. It should be softened but still thick. Chill the mixture briefly before stuffing the cinnamon roll biscuits.

Expert Tips and Tricks to Love this Recipe

These little bites are easy to make. Here are a few tips to make them even better and make sure that they are the best tret ever.

  • Center: Place the chilled cream cheese portion in the center.
  • Crucial Step: Pinch the edges of the dough up and over the filling, meeting them at the top. Pinch the seams together thoroughly to seal the filling completely inside.
  • Seam Side Down: Always place the stuffed bites seam-side down on your prepared baking sheet (parchment paper is best!) or in your pan. This uses gravity and the heat of the oven to help keep the seam closed during baking.
  • Glaze While Warm: Drizzle the glaze over the bites while they are still warm (but not straight-out-of-the-oven hot) so the icing melts slightly into the crevices.

  • 16 ounces Biscuit Dough, I use Grands
  • 3 Tablespoons Brown Sugar
  • 4 ounces Cream cheese softened
  • 1 teaspoon Vanilla
  • 1 ½ teaspoon Cinnamon

For the topping:

  • 1 Tablespoon Melted butter
  • 1 Tablespoon Sugar
  • ½ teaspoon Cinnamon

Instructions

  • Blend together the filling ingredients in a mixing bowl until smooth and creamy.
  • Preheat the oven to 350 degrees.
  • Form the dough into 10 evenly sized balls.
  • Flatten the ball out into a circle on a piece of parchment paper.
  • Drop a small amount of filling in the center of each piece of dough, and fold the edges up over it. You can seal the dough around the filling with a small amount of water on your hands if needed.
  • Place the filled pockets onto a parchment lined baking sheet.
  • Bake for 13-15 minutes, or until browned and cooked through.

Topping:

  • Stir together the granular sugar and ½ tsp cinnamon until well combined.
  • Brush the tops of the cinnamon roll bites with the melted butter, and sprinkle with the cinnamon sugar mixture before serving.

Christina’s Notes

  • Softened Cream Cheese is Key: Your cream cheese must be fully softened (room temperature). This ensures a smooth filling that is easy to mix and won’t be lumpy.
  • The Perfect Filling Consistency: For the filling (usually cream cheese, powdered sugar, and a little vanilla/cinnamon), don’t add too much liquid (like milk or cream). You want the filling to be thick and scoopable almost like a stiff buttercream. If it’s too runny, it will leak out during baking.
  • Chill the Filling: Once mixed, pop your cream cheese mixture into the freezer for about 10-15 minutes, or the fridge for an hour. Slightly chilled filling is firm and easier to work with, making it simpler to seal inside the dough without squishing out.
  • Portion Control: Use only about 1 teaspoon of filling per biscuit piece. Overstuffing is the number one cause of filling ooze.
