Why this Piadina Italian Flatbread Recipe Works

This piadina is a twist on the classic Italian flatbread wrap. It’s ready in under 20 minutes. Stuffed with savory eggs, ham, veggies, and cheese, it’s a foolproof option for breakfast, brunch, or lunch.

  • One Pan: It’s a one-pan, low‑carb breakfast that feels hearty and satisfying without extra fuss.
  • Easy Ingredients: Uses simple, everyday ingredients that are perfect for busy mornings or quick dinners.
  • Fast: The meal features a thin Italian flatbread, typically prepared in the Romagna historical region (which mostly consists of the Italian provinces of Forlì-Cesena, Ravenna, and Rimini, and the Republic of San Marino). We use a tortilla to make it fast.
  • Customizable: Try using whatever veggies, meats, or cheeses you have on hand.

What is a Piadina?

A side view of the finished dish.

It is a rustic, unleavened flatbread that sits somewhere between a flour tortilla and a pita, but with a richer, more indulgent flavor as it is cooked in lard or olive oil. It’s the ultimate Italian “street food” that is traditionally cooked on a terracotta or cast-iron griddle and served steaming hot from small wooden kiosks (chioschi) dotting the Adriatic coast and the providence of Bologna.

Pro Tip for Piadine

Pro Tip: Crack the eggs directly onto the tortilla and don’t stir—this gives you that layered, quesadilla‑meets‑omelet effect that makes the dish feel extra special

Egg, ham, tortillas and spices for the meal.
  • Eggs: Large eggs fit best for coverage and even cooking.
  • Ham: Diced leftover ham works beautifully, but deli ham or bacon can be swapped in.
  • Veggies: Red bell pepper and onion add color and sweetness; feel free to use green pepper, mushrooms, or spinach. Top with arugula for a peppery finish.

Variations and Substitutions for the Filling for the Flatbread Sandwich

Part of the fun of creating a filling and artisanal feel can be switched up to make this recipe your own. You can even make this recipe with sweet fillings like dessert with nutella.

  • Make it spicy: Add jalapeños, hot sauce, or pepper jack cheese.
  • Swap the Cured Meats: Use cooked sausage, prosciutto di parma, bacon, turkey, prosciutto or chorizo use your favorite.
  • Dairy‑free: Use a dairy‑free shredded mozzarella cheese alternative.
  • Mediterranean twist: Swap spices for oregano, basil and use feta with spinach to make this popular street food.
  • Tortilla: Use any type of unleavened bread, experiment with sourdough, whole grain or italian flatbread made in your local specialty grocer. No need to make your own, no rolling pin, no baking soda or baking powder, no need to knead the dough.

How to Make the Piadina Wrap

This recipe keeps things simple with a handful of everyday ingredients that work together to build big flavor fast. Soft tortillas create the perfect base, while eggs add richness and protein. A mix of bell pepper, onion, garlic, and warm spices brings color and depth, and the diced ham adds a savory, hearty bite. Melted Colby Jack ties everything together.

Prep Ahead Suggestions for the Piadina Sandwich

You can prep the filing or make your own dough with lard for the traditional fillings. You can use a whole wheat flour or white flour like they do back in Italy.

  • Cut the Filling: Pre‑dice ham or use leftover ham from another meal. Chop up your vegetables and store in an airtight container.
  • Make Your Seasoning: Mix seasonings into a small prep bowl so they’re ready to go.

Alternate Cooking Methods for the Flatbread Wrap

You can use a hot griddle, cast iron skillet or other device to make these flat bread piadinas. I make these right on the stovetop.

  • Air Fryer: Assemble the tortilla stack as written. Place in the air fryer at 350°F for 6–8 minutes, checking for doneness.
  • Oven: Assemble in an oven‑safe skillet. Bake at 375°F for 10–12 minutes until eggs are set.

Store, Reheat and Use Leftover Piadina Wrap

  • Storing: Cool completely, then refrigerate slices in an airtight container for up to 3 days.
  • Reheat: Skillet: Warm over low heat 3–4 minutes.
  • Use Leftovers
    • Cut into strips and serve over a salad.
    • Reheat and roll into a wrap with avocado or salsa.

Common Questions About This Piadina Recipe

Of course, you can make the piadina from scratch if you like. You can also make a tortilla from scratch if you prefer. The point of this quick and easy recipe is not to have to make your own griddled flatbread.

Expert Tips for Making the Piadina Sandwich

You will feel like you are in the historic region in romagna when you use these expert tips.

  • Dough: Make your own flatbread dough with lard using the recipe listed in the questions above.
  • Use Medium Heat for Even Cooking: Keeping the skillet at medium heat prevents the bottom tortilla from burning before the eggs set. Spread the Filling Evenly Distribute the ham and veggie mixture across the eggs so everything cooks at the same rate and every bite is balanced.
  • Choose a Good Nonstick Skillet: A nonstick pan helps the thin Italian flatbread crisp without sticking and makes slicing and serving much easier.
  • Let Rest Before Cutting: Give the layered piada 1 minute off the heat so the layers settle and hold together when sliced.
  • Add Greens at the End: If using arugula, spinach, or basil, add them after cooking so they stay bright, fresh, and vibrant.
  • Serve this recipe with: List what to serve with Honey Lime Fruit Salad and some Cannoli Cake.

  • ½ cup Ham, diced
  • 5 Large eggs, lightly beaten
  • ½ cup Colby Jack cheese, shredded
  • ¼ teaspoon All Purpose Seasoning

Instructions

  • Heat the olive oil in a large nonstick skillet over medium heat. Add the chopped onion and bell pepper and cook for 4 to 5 minutes, stirring occasionally, until softened.
  • Stir in the garlic, chili powder, cumin, oregano, ham, and All Purpose Seasoning. Cook for 1 minute, stirring constantly, until fragrant.
  • Remove the ham mixture from the skillet and set aside. Wipe out the skillet if needed.
  • Place one flour tortilla in the skillet over medium-low heat. Pour the beaten eggs evenly over the tortilla.
  • Sprinkle the ham mixture evenly over the eggs, then top with the shredded Colby Jack cheese.
  • Place the second tortilla on top and gently press down. Cover the skillet with a lid.
  • Cook for about 5 to 7 minutes, or until the eggs are fully set and the cheese has melted. Carefully flip if needed to lightly brown the second tortilla for 1 to 2 minutes.
  • Transfer to a cutting board and let rest for 2 minutes before slicing into wedges. Serve warm.

Christina’s Notes

  • Warm the tortillas briefly before assembling if they feel stiff. This helps prevent cracking.
  • Don’t overfill the tortilla or it will be difficult to slice and serve.
  • A nonstick skillet with a lid helps the eggs cook evenly without burning the tortillas.
  • Refrigerate leftovers in an airtight container for up to 3 days. Reheat in a skillet over medium-low heat or in the microwave until warmed through.
