  • 355 Millileters Sprite, 1 Can
  • 15 Ounces Lemon Cake Mix, 1 Box
  • 8 Ounces Cream Cheese
  • 2 Tablespoons Butter, softened
  • 4 Cups Powdered Icing Sugar, as needed
  • 2 Tablespoons Milk, as needed
  • 2 Teaspoons Lemon Extract
  • 1 Tablespoon Lemon Zest, about 1 large lemon
  • Yellow Sugar Crystals, optional

Instructions
 

  • Preheat the oven to 350ºF.
  • Line a cupcake or muffin pan with cupcake liners. Set aside.
  • In a large bowl, beat together the lemon cake mix and Sprite for 2 minutes.
  • Scoop the cupcake batter with a ⅓ measuring cup into the prepared cupcake liners.
