For these lemon cake mix cookies you’ll need a white cake mix, a large lemon, some eggs and oil. All of these are things that are super easy to keep on hand which means you can whip up a batch of these cookies even when you aren’t planning to bake!
What can I add to these delicious lemon cookies?
If you want to add some toppings or mix in’s to these lemon cookies you might consider white chocolate chips, lemon chips, or the frosting of your choosing! These cookies would be delicious with a vanilla, lemon, or even orange frosting.
I like to wait until the cookies have cooled and then top them with a sprinkle of powdered sugar for an extra sweet finish!
How to make lemon cookies with cake mix:
What is even better, this lemon cookie recipe is really easy to make. Everything gets mixed up and then we’re just about ready to bake and enjoy these sweet and zesty cookies.
In a large bowl combine the cake mix, eggs, and vegetable oil.
Then add the juice and zest of 1 large lemon.
Mix all ingredients until well combined.
Refrigerate for at least 10 minutes and then spoon onto a baking sheet.
Bake at 350 for about 11-13 minutes or until edges start to turn golden brown.
Optional, sprinkle with a little powdered sugar after the cookies have cooled.
Tips for the best cake mix cookies:
You’ll see that these lemon cake mix cookies are a little on the thin side. If you want to make the cookies thicker and more cake like in texture refrigerate the batter for longer and then use silicone baking mats on your cookie sheets.
Refrigerating the batter will help it stiffen up a bit and hold its shape better when baking. The silicone baking mats will do the same thing!
Another thing to remember is that it’s best to let the cookies cool on the cookie sheets for a few minutes before trying to remove them to a cooling rack. Giving the cookies a few final minutes to finish setting up will help keep them from breaking apart when you scoop them up with the spatula.
