Sugar Cookie Truffles

– sugar cookies – cream cheese – funfetti candy melts – Funfetti Sprinkles – shortening

Grease two cookie sheets and set aside, or line with parchment paper.

Grease cookie sheets

Place the sugar cookies and cream cheese in a food processor and combine until a dough forms.

Process sugar cookies and cream cheese  

Use a cookie scoop to portion out the dough into 1 Tablespoon-sized scoops.

Scoop dough

Roll each scoop into a firm ball.

Roll into a ball 

 Place the candy melts in a microwave-safe bowl and heat for 25 seconds, stir, and reheat as needed.

Melt candy melts 

If the candy melts are too stiff despite being properly melted, stir in the optional shortening.

Add shortening (optional) 

Dip each sugar cookie ball in the melted candy coating; allow the excess to drip off. Place on prepared cookie sheet.

Dip and drip

Scoop the remaining candy melts into a piping bag. Make a small snip at the bottom and drizzle over the truffles.

Drizzle with candy melts 

Add sprinkles while the candy coating is still wet.

Add sprinkles 

Allow candy coating to set fully before storing or serving, about 1 hour. Enjoy!
