 Coconut Pineapple Cake

in the Crock Pot

ingredients

Cake: – 1 yellow cake mix – 1 cup water – 3 eggs – 1 stick butter melted – 20 ounce can crushed pineapple – divided 1 cup drained for cake mix, remaining for glaze – 1 cup coconut – ¼ cup pecans chopped Glaze: – 1 ½ cups powdered sugar – Reserved pineapple and juice – ½ stick butter melted – ½ cup coconut – ¼ cup pecans chopped

 In a bowl stir all cake ingredients just until they come together.

Spray the slow cooker with a nonstick spray and then pour the batter in the crock pot. Cover and cook on high for two hours.

Whisk all glaze ingredients together until well combined.

Pour glaze over warm cake.  Let sit for 5-10 minutes.

Spoon into bowls and garnish with more coconut & pecans, and ice cream or cool whip, if desired.
