Butterfinger Cupcakes

INGREDIENTS

▢ yellow cake mix ▢ butter flavored extract ▢ water ▢ vegetable oil ▢ egg whites ▢ Butterfinger Bits ▢ salted butter ▢ cream cheese ▢ vanilla extract ▢ heavy whipping cream ▢ powdered sugar

STEP 1

Preheat oven to 350 degrees. Spray or line a standard muffin tin.

STEP 2

In a large mixing bowl filled with the cake mix, add in the water, oil, butter extract and eggs.

STEP 3

Using a hand or stand mixer, mix on medium until well incorporated.

STEP 4

Fold in ¾ cup of the crushed Butterfinger Bits.

STEP 5

Add batter into the muffin tin. Sprinkle a bit of the remaining crushed Butterfinger Bits on top.

STEP 6

Bake for 18-20 minutes, or until a toothpick comes out clean. Allow to cool.

STEP 7

In a large mixing bowl or stand mixer, cream the butter and cream cheese, and beat until light and fluffy.

STEP 8

Mix in the vanilla extract.

STEP 9

Slowly mix in the powdered sugar, 1 cup at a time, while adding a tablespoon of the cream in between each cup.

STEP 10

Continue to mix for 1 minute or until creamy. Fold in the crushed Butterfinger Bits.

STEP 11

Fill your prepared piping bag with frosting.

STEP 12

Frost your cupcakes. Top with a bit of the remaining crushed Butterfinger Bits.

STEP 13

Serve and enjoy!
