Cake Mix  Mint Chip Cookies

INGREDIENTS

box chocolate cake mix Andes mint baking chips vegetable oil eggs Andes chocolate mints

STEP 1

Preheat oven to 350 degrees F.

STEP 2

Line baking sheet with parchment paper.

STEP 3

In a large bowl, combine the chocolate cake mix, baking chips, vegetable oil and eggs.

STEP 4

Beat with an electric mixer for 2 minutes, until a cohesive dough forms with no dry patches.

STEP 5

 Use a cookie scoop to portion out dough in 2 Tablespoon-sized pieces, onto the baking tray, about 3” apart.

STEP 6

Bake until cookies have puffed up and cracks have formed. Remove from the oven and place unwrapped chocolate on each cookie. 

STEP 7

Allow the chocolate to warm up, then using spatula spread the melted chocolate over the cookies.

STEP 8

Allow the melted chocolate to set before storing or serving. Enjoy!
