Cup Cakes

Cupcake Ingredients: – 1 chocolate boxed cake mix – 1/2 cup water – 1/3 cup avocado oil – 3 eggs – 1/2 cup hot cocoa mix – Mini Oreo cookies – Small yellow buttons Frosting Ingredients: – 2 sticks unsalted butter – 2 cups marshmallow fluff – 1 teaspoon vanilla extract

Preheat oven to 350 degrees. Line a 12-cup muffin pan with baking liners.

In a large mixing bowl, add cake mix, water, eggs, and oil. Using a hand or stand mixer, mix on low speed for 1 minute, and then on medium for 1 minute. Incorporate the hot cocoa mix.

Fill each muffin cup 2/3 of the way with batter. Bake 18-20 minutes or until it springs back when touched. Let cool on a cooling rack.

In a large mixing bowl or stand mixer, beat butter and vanilla. Slowly mix in the marshmallow fluff for 1 minute or until creamy.

Place icing in piping bag and frost cupcakes. Add two mini Oreos for the Mickey ears. Glue buttons on cupcake wrapper, if desired for this cupcake recipe. You can decorate as Minnie cupcakes too.
