
Today we’re making an Instant Pot apple spice cake. It’s a simple recipe using a boxed cake mix that turns out beautifully and tasty every time!

This tasty and simple Instant Pot apple spice cake will be your new favorite. It’s a good one to make for the holidays but it tastes great year round. Once you give it a try you’ll be making pressure cooker apple spice cakes for every occasion.

It might not be your first thought for what to put into an electric pressure cooker but it should be! The process is so simple and quick, plus everything comes out moist and extra delicious.
Try out this easy method for making a delicious (and gorgeous) layered apple spice cake with your Instant Pot or other programmable pressure cooker.
What will I need to make this Instant Pot apple spice cake recipe?
I’m going to break this down into three sections for you. You’ll need ingredients for the cake, the icing, and the toppings! It’s all really easy to grab and nothing fancy but we’ll keep them separate in case you decide to use store bought frosting and you want to skip those ingredients / process bits!
For the cake you will need a boxed spice cake mix, water, canola oil, and eggs. You’ll also need a springform pan and an 8 inch round cake board for this process!
The icing is delicious and I totally recommend it, to make it from scratch you’ll need unsalted sweet cream butter, powdered sugar, vanilla extract, ground cinnamon, heavy whipping cream, and a large piping bag with a star tip!
To top off the cake and make it extra indulgent and beautiful you will need canned apple pie filling and bottled caramel sauce!

How to make the spice cake in the pressure cooker:
Using a large mixing bowl, whisk together the cake mix, canola oil, water and eggs until combined and smooth.
Spray the springform pan with pam baking spray.
Pour half of the batter into the pan, filling it to about 3/4 half way full.
Place your trivet inside the instant pot.
Cover the top of the springform pan with a paper towel and foil.
Place the springform pan into the instant pot and close the lid,
making sure the vent is sealed.
Cook on manual/ high pressure for 30 minutes.
Do a natural release for 15 minutes.
Remove the cake and let cool for 10 minutes before removing from the pan.
Place cake onto the cake board.
Using a cake leveler, cut the dome off and slice the cake in half.

How to make homemade cinnamon frosting:
Using a standing mixer, beat all ingredients for the frosting together until combined, smooth and stiff with peaks.
Scoop 1 up of frosting into the piping bag and set aside!

How to assemble and decorate this gorgeous spice cake recipe:
Remove the apples from the apple pie filling and chop into bite size pieces placed into a bowl with about 3 tbsp of the filling jam.
Using the bottom layer of the cake, scoop1 C of frosting onto the layer and smooth evenly.
Place the second layer on top.
Using the remaining frosting, frost the entire cake.
Using the piping bag, pipe dollops along the edge of the cake.
Scoop the apple pie filling into the center of the top of the cake.
Drizzle caramel sauce over the cake.

Ingredients
