Strawberries and Cream Cupcakes

INGREDIENTS

Cupcake: - white cake mix - Greek yogurt  - vegetable oil - Nestle Nesquick Strawberry Flavored Powder - egg whites - water - Pink cupcake liners

INGREDIENTS

Frosting: - salted butter - strawberry extract - vanilla - pink Himalayan salt - powdered sugar - half and half or whole milk - pink food coloring - piping bag - Wilton Flamingo Royal Icing Decorations - Pink sanding sugar

STEP 1: Preheat oven to 350 degrees.

STEP 2: Line or spray muffin tin.

STEP 3:  In a large bowl, mix in the cake mix, oil, egg whites, yogurt, and Nestle Nesquick Strawberry Flavored Powder until well combined with a hand mixer.

STEP 4:  Mix in water. Fill muffin liners ⅔ full.

STEP 5:  Bake for 16-20 minutes or until a toothpick inserted into the center comes out clean. Allow cupcakes to cool before frosting.

STEP 6:  Cream butter and sugar in a large bowl until light and fluffy.

STEP 7:  Mix in the strawberry and vanilla extracts and salt.

STEP 8:  Slowly incorporate powdered sugar 1 cup at a time. Add a bit of milk or half and half in between each cup of powdered sugar.

STEP 9:  Mix for 1 minute or until creamy. Add in food coloring.

STEP 10:  Fill piping bag with frosting. Frost cupcakes in circular motions.

STEP 11:  Sprinkle pink sanding sugar, and top with Royal Icing Flamingo Decoration.

STEP 12:  Serve and enjoy!
