Rainbow Colorful Cupcakes

INGREDIENTS

cake mix, white water vegetable oil egg whites ricotta cheese Gel food coloring, red, orange, yellow, green, blue, and purple salted butter vanilla powdered sugar half and half Lorann marshmallow flavored syrup sprinkles, Rainbow colored

STEP 1

Preheat oven to 350 degrees. Spray or line a standard muffin tin.

STEP 2

Add cake mix to a large mixing bowl. 

STEP 3

Using a hand or stand mixer, mix in your water, oil, and eggs on medium until well incorporated. Mix in the ricotta cheese.

STEP 4

Evenly separate the batter into 6 containers and color each with the 6 food colors until desired color of each is achieved.

STEP 5

Add a small spoonful of each color of the batter into the muffin tin until each is about 2/3 full.

STEP 6

Bake for 18-20 minutes, or until a toothpick comes out clean. Allow to cool completely before frosting.

STEP 7

In a large mixing bowl or stand mixer, cream the butter, and beat until light and fluffy. Add in the vanilla extract.

STEP 8

Slowly mix in the powdered sugar, 1 cup at a time, while adding a bit of the half and half or milk in between each cup.

STEP 9

Continue to mix for 1 minute or until creamy. Add in your marshmallow flavoring.

STEP 10

 Prepare piping bag and fill bag with frosting. Frost your cupcakes.

STEP 11

Top each cupcake with the rainbow sprinkles

STEP 12

Serve and enjoy!
