ingredients

Cupcake Ingredients: – 1 white cake mix – 1/2 cup vegetable oil – 4 egg whites – 1 ¼-1 ¾ cups grape soda – *grape Jello divided – Grape food coloring Frosting Ingredients: – 2 sticks salted butter  – 1 teaspoon vanilla extract – 1 teaspoon salt – 4 cups powdered sugar – 1 tablespoon half and half or whole milk not pictured – 2 tablespoons grape soda – *Grape Jello divided – Grape food coloring  – Paper straws  – Purple sanding sugar

Preheat oven to 350 degrees F and then spray or line a standard muffin tin.

PREP

Add cake mix to a large mixing bowl.

MIX CAKE MIX

Using a hand or stand mixer, add in your oil, egg whites, and soda, and mix on medium speed until well incorporated. Mix in 1/2-3/4 of the jello.

ADD OIL, EGG WHITES, SODA, JELLO

Add batter into the muffin tin until each is about 2/3 full. Then, bake for 18-20 minutes, or until a toothpick comes out clean. Allow to cool completely before frosting.

BAKE

In a large mixing bowl, using an electric mixer, cream the butter and beat until light and fluffy.

FROSTING STEP 1

Mix in the vanilla extract, salt and jello.

FROSTING STEP 2

Blend the half and half, or milk, and grape soda together. Slowly add powdered sugar and the liquid mixture until creamy.

FROSTING STEP 3

Add food coloring and pipe frosting on cupcakes. Add your purple sanding sugar and straw as a perfect topping.

DECORATE

Serve and enjoy.
