1cake mix - strawberry , prepared as directed on package instructions
3.5ouncesvanilla pudding
1cupalmond milk
1cup Strawberry Lime Margarita - divided, Ready to Jose Cuervo Drink
8ounceswhipped topping - thawed
16ouncesstrawberries - chopped
1tablespoonlime zest
Lime slices and strawberry slices to garnish
Instructions
Bake cake according to package instructions. Allow to partially cool on a wire rack.
Poke holes with back of a wooden spoon or straw.
Pour 1/2 cup Jose Cuervo Drink Strawberry Lime Margarita over the holes in the cake, allowing it to soak up.
Mix together vanilla pudding mix with almond milk and ½ Jose Cuervo Strawberry Lime Margarita. Fold in whipped topping with strawberries and lime zest. Spread this on top of the cake.
Garnish with limes and strawberry slices.
Refrigerate for at least an hour prior to serving.
Notes
Add Coconut: Finish the top of the cake with a little coconut.
Variation tip: If you want the gelatin layer to be alcohol-free, replace with a non alcoholic margarita mix.
Room Temp: Make sure all the ingredients are room temperature for best results.
Lime Curd: The curd adds a great deal of flavor and a creamy layer to this Strawberry Margarita Cake.
Enhance the Cake: Extra eggs, vanilla extract, plain yogurt or sour cream and other good stuff will enhance this box cake mix.
Bundt Cake: Cupcakes or other ways to make this Margarita cake.
Decorate: Melted chocolate, white candy melts, fresh lime zest or lemon zest can add great lemon-lime flavor to this beautiful cake.
