Sugar Cookie Truffles Recipe

Instructions
Grease two cookie sheets and set aside.
Place the sugar cookies and cream cheese in a food processor and combine until a dough forms.
Use a cookie scoop to portion out the dough into 1 Tablespoon-sized scoops.
Roll each scoop into a firm ball.
Place the candy melts in a microwave-safe bowl and heat for 25 seconds, stir, and reheat as needed.
If the candy melts are too stiff despite being properly melted, stir in the optional shortening.
Dip each sugar cookie ball in the melted candy coating and allow the excess candy to drip off.
Place each dipped sugar cookie truffle on the prepared cookie sheets.
Scoop the remaining candy melts into a piping bag. Make a small snip at the bottom and drizzle over the truffles.
Add sprinkles while the candy coating is still wet.
Allow candy coating to set fully before storing or serving, about 1 hour.
Notes
Add Different Sprinkles:
Make the truffles holiday specific by adding different colors of melting chocolate and sprinkles.
Cookies:
Feel free to use different types of cookies such as chocolate or peanut butter for the cookie mixture.
Variation tip:
Place some chips into the cookie dough, such as semi-sweet chocolate chips, white chocolate chips or toffee chips.
Alternate ingredient:
Crushed nuts add a little crunch to your truffles. Try walnuts, almonds or hazel nuts.
Alternate cooking method tip:
The chocolate melts can be melted in a double boiler if you prefer.
