can crushed pineapple - divided

1 cup drained for cake mix, remaining for glaze

coconut

pecans

Glaze:

powdered sugar

Reserved pineapple and juice

Instructions
In a bowl stir all cake ingredients just until they come together.
Prepare slow cooker with nonstick spray.
Pour batter in, cover and cook on high for 2 hours, DO NOT REMOVE LID during cooking.
When done, turn off slow cooker.
Whisk all glaze ingredients together until well combined.
Pour glaze over warm cake.
Let sit for 5-10 minutes.
Spoon into bowls and garnish with more coconut & pecans, and ice cream or cool whip, if desired.
Serve and enjoy!!
Notes
Add Extract:
Try adding vanilla extract or coconut extract to the cake batter.
Short cut tip:
Use a box coconut cake mix like this one from
Dolly Parton and Ducan Hines.
Variation tip:
Add some maraschino cherries to the batter.
Alternate ingredient:
Toast the coconut in the oven for a few minutes for even more coconut flavor.
Top:
Crushed nuts and more coconut, or try a little pineapple curd
