Instructions
Cake
Preheat the oven to 350 degrees F. Grease a 9 x 13-inch baking dish.
In a large mixing bowl, combine the lemon cake mix and Sprite. Beat with a hand mixer for about 2 minutes, or until the batter is smooth.
Pour the batter into the prepared baking dish and spread it into an even layer.
Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool completely before frosting.
Frosting
In a large mixing bowl, beat the cream cheese and butter until smooth and creamy.
Gradually add the powdered sugar and continue mixing until fully incorporated.
Add the lemon extract and lemon zest. Mix until smooth.
Add the milk, one tablespoon at a time, until the frosting reaches a spreadable consistency.
Spread the frosting evenly over the cooled cake.
Garnish with additional lemon zest and lemon slices, if desired.
Notes
Do not overmix the batter. Mix only until smooth.
Zest the lemon before juicing if you're using fresh lemons for garnish.
For extra lemon flavor, brush the cooled cake with a simple lemon syrup before frosting.
Store covered in the refrigerator for up to 4 days.
Let the cake sit at room temperature for 15 to 20 minutes before serving for the best texture.
