Homemade Ice Cream Sandwiches

Half Gallon Vanilla Ice Cream
▢

Store-bought MnM’s
▢
Mini chocolate chips
▢
Coconut flakes
▢
Sliced almonds
▢
Walnut pieces
▢

Instructions
Put your toppings into individual bowls.
Turn a cookie upside-down and put a scoop of ice cream onto it.
Place another cookie on top, right-side-up, pressing gently.
Use a knife or icing spatula to even out any ice cream that has come out of the sandwich.
Roll into the topping of your choice.
If it doesn’t seem to stick, use your hand to press the topping onto the ice cream.
Place the finished ice cream sandwich on a cookie sheet covered with a piece of parchment paper.
Put in the freezer for 10-20 minutes to harden.
Store by wrapping each ice cream sandwich in a piece of parchment paper and place in a gallon freezer storage bag.
Store ice cream sandwiches for a few weeks.
When you are ready to have one, place it on a plate at room temperature for a few minutes before eating, as the cookies will be hard.

Ice Cream
: Strawberry, chocolate or mint chocolate chip, choose your favorite
Add Different flavored chips:
butterscotch chips, peanut butter chips, dark chocolate chips can be great in this recipe
Nuts:
Almond slivers, macadamia nuts, pecans or peanuts are so good in this recipe
Cereal:
Fruity Pebbles, Cinnamon Toast Crunch, Cocoa Pebbles or your child's favorite
Alternate ingredient:
Sugar cookies, snickerdoodles, peanut butter cookies are a great alternative cookie
