20 Maraschino cherries - can cut up or leave whole
¼cupred sugar crystals - optional
Instructions
Preheat oven to 350F
Line two baking sheets with parchment paper or silicone baking mats.
Combine the chocolate cake mix, eggs and oil together until completely combined.
Portion the dough into 1-Tablespoon sized scoops.
Flatten each scoop and place a cherry in the center. Wrap the cookie dough around the cherry so that it is completely enclosed.
Place the sugar crystals in a small bowl and dip the cookie ball into the sugar crystals.
Place the cookie ball sugar-side up on the prepared baking mats.
Bake for 8-10 minutes.
Notes
Add Nuts: Walnuts or almonds add a little crunch to the chocolate covered cherry cookies. Also try adding a little vanilla extract or almond extract to these Chocolate Covered Cherry Cookies.
Short cut tip: If you don't want to mess with wrapping the dough around the cherry you can always chop up the cherries and just mix the chopped cherries into the batter. Make sure they are drained very well in either case!
Variation tip: Make with different varieties of chocolate cake such as dark chocolate, milk chocolate or devil's food.
Alternate ingredient: Try using an icing on top of the cookies, such as chocolate or cherry frosting.
Alternate cooking method tip: These cookies can be baked in the air fryer so there is no need to heat up your oven.
Dietary consideration tip: Low sugar or sugar free cake mix can be great for this recipe.
