Red Velvet Sandwich Cookies

chocolate cake mix

1 box

cup
canola or vegetable oil

eggs
▢

teaspoon
red gel food coloring

cream cheese frosting

Instructions
Line a cookie sheet with parchment paper and set aside.
In a medium-sized bowl, combine cake mix, oil and eggs. Mix thoroughly.
Once you achieve a dough-like consistency, add red gel food coloring. Mix until tinted completely.
Cover the bowl with plastic wrap and chill in the refrigerator for 30 minutes.
Remove from refrigerator. Pre-heat your oven to 350 degrees F.
Roll dough into one-inch balls.
Place on lined cookie sheet about 2 to 3 inches apart from each other.
Bake for 9 to 12 minutes. Let cool completely.
Place icing on the bottom of one cookie and then place another cookie on top to create a sandwich.
Notes
Variation tip:
Sprinkles are a great option to make this red velvet cookie recipe special.
Alternate ingredient:
Try adding candies, chocolate coated candies or other candy treats.
Alternate cooking method tip:
Feel free to place the cookies in the air fryer at 300 for about 8 minutes.
