Add all of the ingredients, except for the chopped walnuts, into a large mixing bowl. Use an electric mixer to beat until well combined.
Grease the mini muffin pan well. Then spoon the batter into the muffin molds.
Sprinkle the crushed walnuts on top of the batter before baking.
Bake for 10-15 minutes, or until cooked through.

This Recipe Can be Doubled: This is a great recipe for a crowd. Simply increase the ingredients proportionately and split it into two baking dishes before baking.
