I’m not a huge fan of nuts in my cookies but these would also be great with some macadamia nuts mixed in, they remind me of a white chocolate macadamia nut cookie and the cranberries add a nice little pop of brightness.

This delicious recipe for cookies is made with a cake mix…that’s right, cake mix! Look at those beauties, can you believe it?! I’m going to show you how easy it is to make these wonderful cookies.

The cake mix takes a lot of the stress out of these homemade cookies. First of all it means you don’t have to drag out all the flour, sugar, baking soda, etc. You have all the ingredients pretty much pre-measured and ready to go in a boxed cake mix!

In addition to the cake mix you’ll need a total of four other ingredients which means that you need five total for these easy cookies. I wasn’t kidding when I said these white chocolate cranberry cookies would be easy to make.

Kitchen essentials for baking cake mix cookies:

If you are trying to pick out some of the best supplies to stock your kitchen for cake mix recipes and baking in general, these are some of our favorites and must have items.

I like half sheet baking pans that are quality (hello no noisy pops or sloshed cookie dough from twisting), I line my cookie sheets with silicone baking mats. These are a must when doing cake mix recipes which can settle and become thin at lot easier than traditional cookie dough.

Of course mixing bowls, a mixer, spatula, and some whisks should be on your list if you don’t have ones that you love. I also like to have a set of cooling racks so that my recipes can properly cool before they’re scarfed down by my family!

Ingredients needed for white chocolate cranberry cookies:

To make these delicious cookies you will ned a vanilla cake mix, some eggs, oil, dried cranberries, and white chocolate chips…that’s it.

You don’t need anything else listed on the boxed cake mix. If you want to add some macadamia nuts in there you could totally mix them in and it’ll be fine.

Bake for 7-9 minutes or until there are cracks on the top of cookies.

Let cool on baking tray for 10 minutes.

It’s important to let them cool on the baking tray. If you try to move them to soon they’re going to crack, fall apart, and be a general pain to deal with! Those ten minutes on the tray will also keep cooking them a bit, so be sure to let them cool on the trays.
