Fruity Pebble Cupcakes

INGREDIENTS

Cupcake Ingredients – Box White Cake Mix Fruity Pebbles Cereal White Chocolate Pudding Mix Water Vegetable Oil Egg Whites

INGREDIENTS

Frosting – Salted Butter – Vanilla Extract – Heavy Whipping Cream – Vanilla Greek Yogurt – Powdered Sugar – Fruity Pebbles Cereal

STEP 1: Preheat oven to 350 degrees F and fill cupcake tin with liners

STEP 2: In a large mixing bowl, add the cake mix, pudding mix, water, oil, and egg whites.

STEP 3: Using an electric mixer, mix on medium until batter is smooth.

STEP 4: Fold in ¾ cup of the Fruity Pebbles Cereal.

STEP 5: Once batter is smooth, fill cupcake liners until each is about 2/3 full. Sprinkle a pinch of Fruity Pebble cereal on top of batter before baking.

STEP 6: Bake for 18-20 minutes, or until a toothpick comes out clean. Let cupcakes cool fully before frosting.

STEP 7: In a clean, large bowl, use an electric mixer to beat 1 – 1/2 cups of softened butter until fluffy.

STEP 8: Slowly incorporate powdered sugar, 1 cup at a time. 

STEP 9: Add vanilla extract and a tablespoon of yogurt and cream between each cup. Continue to mix until creamy and light.

STEP 10: Fill your piping bag with buttercream and frost cupcakes once they are cool. Top with remaining Fruity Pebbles cereal.

STEP 11: Serve and enjoy!
