Why this Carrot Cake Waffle Recipe Works
Carrot cake waffles are more than just a breakfast item; they’re a delightful fusion of two beloved comforts.
- Nostalgic Comfort with a Twist: They offer all the familiar, warm spices and tender crumb of carrot cake recipe, but in a fun, crispy waffle form. It’s a playful nod to a classic that makes breakfast feel special.
- Irresistible Flavor Profile: The natural sweetness of carrots, combined with cinnamon, nutmeg, and often ginger, creates a complex and comforting flavor. When paired with a hint of cream cheese glaze, it’s truly a match made in heaven.
- Texture Heaven: The waffle iron delivers a crispy exterior and a soft, moist interior, providing a satisfying textural contrast that you don’t get with traditional carrot cake. I like my waffles crispy so I left in the machine for a while.
- Versatility: While perfect for breakfast or brunch, these waffles can easily double as a unique dessert. I love the carrot cake flavor and they also freeze well.
- Sneaky Nutrition: With real carrots in the mix, you’re getting a little extra vegetable power in your morning meal. You can make vegan carrot waffles or a gluten free version.
My waffles are sticking. What am I doing wrong?

Grease your waffle iron. Ensure your waffle iron is well-greased (even if non-stick) and fully preheated. Don’t open the iron too early.
Pro Tip to Keep Waffles Warm
Preheat your oven to 200°F (93°C)
Place a wire rack on a baking sheet and set it on the middle oven rack. As each waffle finishes, transfer it directly to the wire rack. This setup lets steam escape so the waffles stay crisp—not soggy.

Variations and Substitutions for Carrot Waffles
- Variations:
- Nutty Crunch: Add 1/2 cup of chopped walnuts or pecans to the batter for extra crunch and flavor.
- Raisin Delight: Fold in 1/4 to 1/2 cup of golden or dark raisins for a classic carrot cake element.
- Pineapple Perk: For a tropical twist, add 1/4 cup of well-drained crushed pineapple to the batter. Reduce other liquids slightly if the batter seems too thin.
- Zucchini Boost: For even more hidden veggies, you can substitute some of the shredded carrot with shredded zucchini (make sure to squeeze out excess moisture from the zucchini).
- Coconut Craze: Mix in 1/4 cup of shredded unsweetened coconut for a subtle coconut flavor.
- Ginger Kick: Increase the ground ginger or add 1/2 teaspoon of freshly grated ginger for a bolder spice profile. Ground chia seeds can make it healthier.
- Spiked Glaze: Add a tablespoon of rum extract or a hint of bourbon to your cream cheese glaze for an adult twist.
- Dairy/ Wet Ingredients:
- Buttermilk: If you don’t have buttermilk, you can make your own by adding 1 tablespoon of white vinegar or lemon juice to a measuring cup and filling the rest with regular milk to equal 1 cup. Let sit for 5-10 minutes.
- Non-Dairy Milk: Use almond milk, soy milk, oat milk, or any other non-dairy milk.
- Oil: Use vegetable oil, canola oil, or melted coconut oil instead of butter for a dairy-free option.
- Eggs: For an egg substitute, use a “flax egg” (1 tablespoon ground flaxseed meal mixed with 3 tablespoons water per egg, let sit for 5 minutes). This works best for up to 2 eggs.
- Spices: Adjust the amounts of cinnamon, nutmeg, and ginger to your taste. You can also add a pinch of allspice or ground cloves.

Prep Ahead Suggestions for Healthy Carrot Cake Waffles
Carrot cake waffles are excellent for making ahead, saving you time on busy mornings:
- Batter (Refrigerated): Prepare the carrot mixture the night before and store it in an airtight container in the refrigerator for up to 24 hours. Give it a good whisk before using, as the flour may settle.
- Cooked Waffles (Refrigerated or Frozen): Cook a large batch of waffles, let them cool completely on a wire rack, then store them:
- Refrigerated: In an airtight container for up to 3-4 days. Reheat in a toaster, toaster oven, or air fryer for crispness.
- Frozen: Stack cooled waffles with parchment paper in between (to prevent sticking) in a freezer-safe bag or container for up to 2-3 months. Reheat directly from frozen in a toaster, toaster oven, or air fryer until heated through and crispy.
- Toppings: Prepare your cream cheese glaze or other desired toppings in advance and store them separately in the refrigerator.
Make Carrot Cake Pancakes as an Alternate Cooking Methods
If you don’t have a waffle iron, you can still enjoy the delicious flavors of carrot cake in other forms! The batter for carrot cake waffles is essentially a spiced, carrot-filled batter, making it highly versatile
- Pancakes: Simply cook the waffle batter on a preheated, lightly greased griddle or non-stick skillet over medium-low heat, just as you would regular pancakes.
How to Store, Reheat and Use Leftovers
After cooking, immediately transfer the waffles to a wire cooling rack. This allows air to circulate around them and prevents steam from getting trapped, which can make them soggy. Let them cool completely to room temperature.
- Storing: Once cooled, place the waffles in an airtight container or a resealable plastic bag. If stacking, you can place a piece of parchment paper between each waffle to prevent sticking.
- Reheating: Pop them directly into a toaster on a medium-low setting. You might need to toast them twice or adjust the setting for your desired crispness. You can pop them in the toaster oven
- Using Leftovers: Dessert Waffle Bowls: Gently press a warm waffle into an oven-safe bowl or muffin tin to form a “bowl” as it cools. Fill with ice cream, fruit, whipped cream, and a drizzle of caramel or chocolate sauce.
- Waffle Parfaits: Layer crumbled waffles with yogurt, fruit, and granola for a quick and easy breakfast or snack.
Common Questions About This Brunch Recipe –
Overfilling the waffle iron can lead to sogginess. Also, stack cooked waffles on a wire rack, not a flat surface, to allow steam to escape and prevent condensation.
Yes, but freshly shredded carrots often have better moisture and flavor. If using pre-shredded, ensure they are finely shredded.
Don’t overmix the batter. Make sure your waffle iron is hot enough. Also, a little oil or butter in the batter helps. Reheating in a toaster or air fryer will bring back crispness.
You can make a cream cheese frosting, a little melted butter and maple syrup, some whipped cream or some greek yogurt.

Expert Tips for Making Cake Waffles Recipe
While the recipe itself is straightforward, a few insider tricks can elevate your results and ensure every bite is golden, crispy, and full of that irresistible carrot cake magic. These are the tips I’ve gathered over countless batches, designed to help you master the waffle iron and impress everyone at the breakfast table.
- Don’t Overmix: Mix the wet and dry ingredients just until combined. Lumps are okay! Overmixing develops gluten, leading to tough waffles.
- Grate Your Own Carrots: Freshly grated carrots offer the best flavor, moisture, and texture. Finely grate them for even distribution and a tender crumb.
- Proper Waffle Iron Temperature: Ensure your waffle iron is fully preheated before adding the batter. A good hot iron creates that desirable crispy exterior.
- Don’t Overfill: Use just enough batter to cover the waffle grid without overflowing. Too much batter can lead to undercooked or soggy waffles.
- Rest the Batter (Optional but Recommended): Let the batter rest for 10-15 minutes before cooking. This allows the flour to fully hydrate, resulting in a more tender waffle.
- Serve Immediately: Waffles are best served hot and fresh off the iron.
- Topping is Key: A simple cream cheese glaze (cream cheese, powdered sugar, milk/cream, vanilla extract) is the quintessential topping. Don’t skimp!
- Get Creative with Toppings: Beyond cream cheese glaze, consider toasted nuts, a dusting of powdered sugar, a dollop of whipped cream, a drizzle of maple syrup, or a sprinkle of cinnamon.
- Clean Your Waffle Iron: Clean your waffle iron according to the manufacturer’s instructions after each use to ensure longevity and prevent sticking.

when u look at ingredients and your boxes show for 1,2,3x wouldn’t it need to say 2 boxes, or 3 boxes when u click on the x if you want to make multiple batches? the eggs, oil, & water change to proper amounts but not the amount of boxes, do u need a box for each batch if doing multiples, or only 1 box period, no matter how many x u want to make, so basically just the same as 1 box mix x each box
There must be a glitch you will need a box for each batch that you want to make.
